Ghirigoro is born from the careful selection of Cabernet-Sauvignon, Sangiovese e Foglia Tonda grapes from the vineyards with the best exposition to the sun. The variety of soils of Villa Corliano and their positions permit the harvest to take place at the best possible moment, on the basis of the ripeness of the grapes. Vinification takes place in cement vats, after which there follows a second phase of malolactic fermentation in barriques: the wine is immediately put to rest in drums of French oak, where it remains, depending on the year of harvest, for a period that goes from twelve to eighteen months. The elegance and refinement of this wine makes it alive with fruity aromas. Thanks to the sweet tannins and light traces of wood, this wine is balanced and uniquely harmonious to the palate. An excellent accompaniment to game and cheese aged in grottoes.

Harvest and vinification
The grapes are hand-picked at different times, depending on their ripeness. After the stems are removed and a light pressing, the maceration takes place for 18 days in tanks at controlled temperatures. The wine is refined for 18 months in French barriques before bottling. There follows an ulterior refinement of three months in the bottle.

Best accompanied by savoury pastas and risottos, game, t-bone steaks and very pleasant with cheeses aged in grottoes. Best at 18° C. in crystal glasses, opening the bottle a few hours before serving.
