Briccole Riserva is created from the careful selection of the most mature grapes. The wine is primarily composed of Sangiovese with a percentage of Cabernet Sauvignon that varies from vintage to vintage. Upon completion of maceration, which takes place in cement vats, the wine is placed in five-hundred litre wooden containers. The two years of aging and at least four months of refining in the bottle give body and balance to Briccole Riserva, uniting the freshness of the grapes to the elegance of the scent of wood. Briccole Riserva is an excellent companion to game and braised meats.

Harvest and vinification
The grapes are harvested by hand, and after the stalks are removed and a light pressing, the maceration takes place for 15 days in cement vats at a controlled temperature. Upon completion of maceration, the wine is placed in small, five-hundred litre wooden barrels. The traditional vinification, with the repassing of must over the grape dregs and the careful batonnage of the wine’s yeast lead to a fusion of the aromas of wood and grapes that is sweet and elegant. After two years of aging, the wine is refined in the bottle for at least four months.
